Instructions

  1. Heat a griddle or frying pan until hot but not smoking.

  2. Butter one side of each bread slice.

  3. Grate cheddar cheese with a large-hole grater and place on the unbuttered side of two bread slices.

  4. Season with salt and pepper.

  5. Top with the second bread slice, buttered side up.

  6. Place sandwiches in the hot pan, pressing gently with a spatula. Cook each side for several minutes until golden brown and the cheese is melted.

  7. Cut diagonally and serve hot.
