The Chivito: Uruguay's Most Iconic Sandwich

A traditional Uruguayan chivito sandwich features a generous stack of beef, bacon, and ham, crowned with a fried egg.

Instructions

  1. Preheat your broiler.

  2. In a large skillet, cook bacon until crispy; set aside.

  3. Prepare beef fillets by slicing them in half, seasoning with salt and pepper, and pounding them thin.

  4. Using the same skillet (after draining fat), cook the beef for 2 minutes per side; set aside.

  5. Clean the skillet, melt butter, and fry eggs sunny-side up; set aside.

  6. Spread ketchup and mayonnaise on the buns, then layer lettuce, bacon, beef, ham, tomato, and mozzarella on the bottom halves.

  7. Broil the assembled sandwiches briefly to melt the cheese.

  8. Top each sandwich with a fried egg and the remaining bun half, then serve.
