The Best Sunday Roast Chicken

Instructions

Preheat the oven to 200C/400F/Gas 6.

Place chicken breast-up in a roasting tin; massage with softened butter.

Insert half of the garlic into the chicken cavity and season with sea salt; toss remaining garlic into the tin.

Roast chicken for 1 hour 30 minutes.

Remove chicken, wrap in foil, and rest for 15 minutes.

Heat the roasting tin on the stovetop; simmer pan juices, then add white wine and stir for 5 minutes.

Stir in stock, lower heat, and simmer until the sauce reduces by one-third.

Add chicken resting juices to the sauce, bring to a boil, then strain into a gravy boat.

Carve chicken, arrange with vegetables, and serve with the prepared sauce.
