The Best Shrimp Salad

Instructions

  1. Start boiling 3 quarts of water with 1 tablespoon of salt in a large saucepan.

  2. Peel, devein, and rinse 1 to 1 1/2 pounds medium shrimp.

  3. Add shrimp to boiling water, reduce heat to medium-low, cover, and simmer for 5 minutes until opaque and pink.

  4. Immediately drain shrimp, transfer to a bowl, cool completely, dry, and coarsely chop.

  5. Combine chopped shrimp with 1 cup diced celery, 1/4 cup chopped bell pepper, 1 tablespoon fresh lemon juice, and 3 to 4 tablespoons mayonnaise.

  6. Season with 1/4 teaspoon salt and 1/4 teaspoon pepper; taste and adjust mayonnaise or seasonings as desired.

  7. Serve on a bed of lettuce or mixed greens, optionally with avocado or tomato.
