The Best Deep-Fried Pork Loin Roast

Instructions

  1. Preheat a deep-fryer to 325 F.

  2. Whisk together apple juice, Worcestershire, mustard, and onion powder; inject this mixture into the pork loin and plug the holes with garlic slivers.

  3. Liberally coat the pork with dry rub, then place it in a sealed bag and refrigerate overnight.

  4. Allow the pork loin to reach room temperature.

  5. Carefully lower the pork, fat-side down, into the hot oil and fry for about 1 hour, or until its internal temperature reaches 155 F.

  6. Tent the pork with foil and let it rest for 30 minutes before slicing and serving.
