The Best Chicken Salad Sandwich

Instructions

  1. Prepare 1 1/2 cups of cooked chicken by either baking (preheat oven to 350 F, season chicken breasts, bake 22-30 minutes until 160 F) or poaching (place chicken breasts in water, boil, then simmer 8-15 minutes until 160 F); cool and chop the chicken.

  2. Combine the chopped chicken, 3 tablespoons finely chopped onion, 1/4 cup finely chopped celery, and 1 chopped hard-boiled egg in a medium bowl.

  3. Stir in 1/3 to 1/2 cup mayonnaise, 1 tablespoon dill pickle relish, 1/4 teaspoon salt, and 1/8 teaspoon pepper.

  4. Add more mayonnaise if a moister consistency is desired.

  5. Serve the chicken salad evenly on 8 slices of bread with lettuce.
