Instructions

  1. Preheat oven to 350 F.

  2. Combine brown sugar, melted butter, eggs, molasses, and vanilla extract in a large bowl; mix thoroughly.

  3. Stir in pumpkin puree and pumpkin pie spice.

  4. Whisk flour, baking powder, baking soda, and salt in a separate bowl.

  5. Gradually add dry ingredients and milk to the pumpkin mixture, alternating halves, mixing until smooth.

  6. Line a muffin tin, fill liners two-thirds full, and bake for 15 minutes or until a toothpick comes out clean.

  7. Cool cupcakes completely.

  8. Frost each cooled cupcake with chocolate frosting.

  9. Position a vanilla wafer on the bottom half of each cupcake.

  10. Arrange candy corn above the wafer, white side down, to form feathers.

  11. Attach candy eyes to the upper wafer with a dab of frosting; use an orange candy corn piece or a cut candy for the beak.

  12. Place a fruit roll-up strip next to the beak for the waddle.
