Thai Yellow Fried Rice With Shrimp

Instructions

  1. Ensure cold, cooked rice is dry; if fresh, refrigerate uncovered for several hours. In a bowl, combine rice with 1 tablespoon oil, using fingers to separate clumps until grains are distinct.

  2. Mix all stir-fry sauce ingredients in a cup, omitting turmeric if using saffron rice.

  3. Heat a wok or large frying pan over medium-high heat. Add 2 tablespoons oil, garlic, and shrimp; stir-fry for 1-2 minutes until shrimp is pink and plump, adding wine if the pan becomes dry.

  4. Push the shrimp and garlic to the side, add a little more oil to the center, then scramble the eggs in the pan for about 1 minute.

  5. Maintain medium-high heat. Add the rice and peas to the wok, then pour the prepared sauce evenly over them.

  6. Stir-fry the rice for approximately 3 minutes, or until the rice and peas are thoroughly heated and begin to pop.

  7. Taste the rice and add more fish sauce, 1/2 tablespoon at a time, if additional saltiness is desired, continuing to stir-fry briefly after each addition.

  8. Remove from heat, sprinkle with spring onion and coriander, then serve hot.
