Instructions

  1. Combine marinade ingredients, coat the steaks, and refrigerate for 20 minutes to 4 hours.

  2. Mix dressing ingredients, adjusting fish sauce to achieve a balanced tangy, sweet, sour, spicy, and salty taste.

  3. Warm a grill and lightly oil it.

  4. Grill the marinated steaks until cooked externally and slightly rare internally, brushing with any leftover marinade after turning.

  5. In a large bowl, combine greens, onion, tomato, coriander, and mint.

  6. Thinly slice the grilled steak, add it to the salad with three-quarters of the peanuts, drizzle with dressing, and toss.

  7. Portion into bowls, topping with the remaining chopped peanuts and coriander.
