Thai Sweet and Sour Pork

Instructions

  1. Chop ribs into 2-3 inch segments, marinate, and refrigerate while preparing other ingredients.

  2. Heat a wok or large pan over medium-high heat with 1-2 tablespoons of oil, then stir-fry shallot, garlic, and ginger for 1 minute.

  3. Add sweet & sour sauce ingredients (excluding lime leaves and cornstarch-water), stir, and bring to a boil.

  4. Stir in marinated pork, lime leaf strips, and mushrooms. Reduce heat to medium-low, cover, and simmer for 10-12 minutes, stirring occasionally.

  5. Add bell pepper and snow peas, then simmer for 3-4 minutes until vegetables soften and pork is cooked.

  6. Stir in baby bok choy and cornstarch-water mixture; cook for 1-2 minutes until sauce thickens and bok choy is crisp.

  7. Reduce heat to low, adjust seasoning with fish sauce or sugar as needed. Garnish with fresh coriander and serve with rice.
