Thai Sweet and Sour Pork

Instructions

Chop ribs into 2-3 inch segments, marinate, and refrigerate while preparing other ingredients.

Heat a wok or large pan over medium-high heat with 1-2 tablespoons of oil, then stir-fry shallot, garlic, and ginger for 1 minute.

Add sweet & sour sauce ingredients (excluding lime leaves and cornstarch-water), stir, and bring to a boil.

Stir in marinated pork, lime leaf strips, and mushrooms. Reduce heat to medium-low, cover, and simmer for 10-12 minutes, stirring occasionally.

Add bell pepper and snow peas, then simmer for 3-4 minutes until vegetables soften and pork is cooked.

Stir in baby bok choy and cornstarch-water mixture; cook for 1-2 minutes until sauce thickens and bok choy is crisp.

Reduce heat to low, adjust seasoning with fish sauce or sugar as needed. Garnish with fresh coriander and serve with rice.
