Thai Stir-Fried Spinach With Garlic and Peanuts

Instructions

  1. Combine stock, oyster sauce, fish sauce, sherry, and brown sugar; set aside.

  2. Rinse and drain the spinach.

  3. Heat a wok or large frying pan over medium-high heat with 1-2 tablespoons vegetable oil.

  4. Stir-fry garlic and chili (if using) for 1 minute until fragrant.

  5. Add red pepper (if using) and stir-fry for 1 minute; then add spinach and stir-fry for 30 seconds until coated.

  6. Pour in the prepared sauce and continue stir-frying for 2-4 minutes until spinach is dark green with crisp stems.

  7. Remove from heat, taste, and adjust seasoning with fish sauce, lime/lemon juice, or chili as desired.

  8. Serve spinach with pan liquids, drizzle with sesame oil, and top with chopped nuts.
