Thai Stir-Fried Pork With Lime and Mint
A traditional Thai stir-fry combines pork and vegetables with bright lime and mint flavors, optionally topped with an egg.

Instructions

Combine lime juice, fish sauce, brown sugar, and soy sauce; set aside.

Heat a wok or pan over high heat with oil; stir-fry ginger, garlic, chile, and onion for 2-3 minutes.

Add pork; stir-fry 3-4 minutes, incorporating 2 tablespoons of the prepared sauce.

Stir in bell peppers, gradually adding remaining sauce until the dish is cooked through.

Remove from heat, then fold in chopped mint.

Adjust seasoning with additional fish sauce or chile if desired, and serve with jasmine rice.
