Thai Stir-Fried Noodles With Beef

Instructions

  1. Begin boiling water for noodles. Slice beef thinly and marinate with soy sauce and 1 teaspoon brown sugar for 15 minutes.

  2. Cook noodles to al dente, then drain and rinse with cold water.

  3. Combine chicken stock, oyster sauce, dry sherry, fish sauce, 2 tablespoons brown sugar, chili flakes, and cornstarch for the stir-fry sauce.

  4. Heat oil in a wok. Stir-fry shallot, garlic, ginger, and optional chili for 1-2 minutes.

  5. Add marinated beef with its marinade; stir-fry for 3 minutes, adding 2-3 tablespoons of stir-fry sauce.

  6. Stir in carrots for 1-2 minutes, adding more sauce if needed.

  7. Add mushrooms, bell pepper, and broccoli; stir-fry until tender-crisp, adding sauce as required.

  8. Introduce noodles and remaining stir-fry sauce. Fry for 4-6 minutes until noodles are cooked and sauce is absorbed.

  9. Adjust seasoning as desired with fish sauce, soy sauce, lime or lemon juice, or chili.

  10. Serve, drizzling with sesame oil and garnishing with basil and lime wedges.
