Instructions
-
Start boiling water in a steamer; prepare the steamer by lining with a banana leaf or greasing a plate or basket.
-
Process or stir chicken, mushrooms, garlic, galangal or ginger, spring onions, fish sauce, soy sauce, white pepper, and egg together to create the filling.
-
Place a small amount of filling on each dumpling wrapper, then moisten the edges with water.
-
Fold the wrapper edges over the filling, press to seal, pinch a decorative edge, and gently flatten the top.
-
Set finished dumplings on a cornstarch or flour-dusted plate and repeat until all filling and wrappers are used.
-
Steam dumplings in the boiling steamer for approximately 10 minutes until cooked through.
-
While dumplings steam, combine dipping sauce ingredients and adjust flavoring as desired.
-
Remove cooked dumplings from the steamer and serve immediately with the dipping sauce, or fry them.
