Thai Steamed Dumplings With Dipping Sauce Recipe

Instructions

  1. Start boiling water in a steamer; prepare the steamer by lining with a banana leaf or greasing a plate or basket.

  2. Process or stir chicken, mushrooms, garlic, galangal or ginger, spring onions, fish sauce, soy sauce, white pepper, and egg together to create the filling.

  3. Place a small amount of filling on each dumpling wrapper, then moisten the edges with water.

  4. Fold the wrapper edges over the filling, press to seal, pinch a decorative edge, and gently flatten the top.

  5. Set finished dumplings on a cornstarch or flour-dusted plate and repeat until all filling and wrappers are used.

  6. Steam dumplings in the boiling steamer for approximately 10 minutes until cooked through.

  7. While dumplings steam, combine dipping sauce ingredients and adjust flavoring as desired.

  8. Remove cooked dumplings from the steamer and serve immediately with the dipping sauce, or fry them.
