Instructions

  1. Heat a small pan over medium heat and cook shrimp until opaque, flipping once, then set aside to cool.

  2. In the same pan, cook minced pork over medium heat until done, ensuring it doesn't brown, then reserve it with juices to cool.

  3. Combine the cooled shrimp, pork, cilantro, spring onion, onion, celery leaves, and chiles in a medium bowl.

  4. Whisk fish sauce, lime, and sugar in a small bowl until sugar dissolves.

  5. Pour dressing over the salad ingredients and mix well.

  6. Serve immediately with Thai jasmine rice, adjusting seasoning to taste.
