Instructions

  1. Soak wooden skewers in water for 1 hour to prevent burning.

  2. Slice beef into thin strips or bite-size pieces and place in a bowl.

  3. Combine brown sugar, fish sauce, lemongrass, soy sauce, oil, coriander, cumin, turmeric, shallots, galangal, chiles, and garlic in a food processor; blend until smooth.

  4. Taste the marinade, adjusting for sweetness, saltiness, or spiciness as desired.

  5. Pour marinade over beef, toss to coat, and marinate for at least one hour.

  6. Preheat a gas, charcoal, or stovetop grill to medium heat (350°F to 375°F).

  7. Thread marinated beef onto skewers, filling up to 3/4 of the skewer.

  8. Grill satay for 7 to 10 minutes, basting with leftover marinade and flipping once or twice, until cooked through.

  9. Serve with jasmine rice and peanut sauce.
