Thai Satay Kebabs
Craft versatile satay, suitable for chicken, beef, pork, or vegetarian options, complete with a flavorful peanut dipping sauce.

Instructions

Soak wooden skewers in water for 1 hour to prevent burning.

Slice beef into thin strips or bite-size pieces and place in a bowl.

Combine brown sugar, fish sauce, lemongrass, soy sauce, oil, coriander, cumin, turmeric, shallots, galangal, chiles, and garlic in a food processor; blend until smooth.

Taste the marinade, adjusting for sweetness, saltiness, or spiciness as desired.

Pour marinade over beef, toss to coat, and marinate for at least one hour.

Preheat a gas, charcoal, or stovetop grill to medium heat (350°F to 375°F).

Thread marinated beef onto skewers, filling up to 3/4 of the skewer.

Grill satay for 7 to 10 minutes, basting with leftover marinade and flipping once or twice, until cooked through.

Serve with jasmine rice and peanut sauce.
