Thai Satay

Instructions

  1. Process lemongrass, shallots, garlic, chiles, galangal or ginger, turmeric, coriander, cumin, soy sauce, fish sauce, brown sugar, and oil in a food processor to create the marinade.

  2. Taste the marinade and adjust sweet, salty, or spicy flavors as needed.

  3. Cut beef or chicken into thin strips.

  4. Combine the meat with the marinade in a bowl, reserving some marinade for basting, and marinate for 2 to 24 hours.

  5. Thread the marinated meat onto wooden skewers, leaving a handle at one end.

  6. Preheat grill. Grill the satay for 10 to 20 minutes, basting with the reserved marinade after the first turn, until cooked.

  7. Serve the satay with Thai jasmine rice and peanut sauce.
