Thai Ribs Recipe

Instructions

  1. Preheat oven to 325 F.

  2. Chop ribs, keeping fat on, and place them in a 9x13 inch baking dish. Combine marinade ingredients, then pour over ribs, ensuring all sides are coated. Marinate for at least 10 minutes.

  3. Add water if needed to ensure 1/4 to 1/2 inch marinade depth. Cover the dish and bake for 1 hour.

  4. Remove from oven, turn any dry ribs, then cover and return to the oven for another 1 hour.

  5. While ribs bake, combine all Thai Sauce ingredients in a saucepan. Bring to a boil over high heat, reduce to medium, and simmer for 10-12 minutes until reduced by one-third and thickened.

  6. Remove sauce from heat, stir in 1/2 tablespoon lime juice. Once cooled, taste and adjust flavors by adding more sugar, cayenne, fish sauce, or lime juice as desired.

  7. Transfer cooked ribs to a serving dish with some pan sauce. Drizzle with the Thai sauce, then top with green onion and coriander. Serve with jasmine rice.
