Instructions

  1. Combine 1/4 cup dry roasted unsalted peanuts, 2 sliced medium shallots, 5 cloves garlic, 1-2 red chiles, 1 thumb-sized piece galangal (or ginger), 1 minced lemongrass stalk, 2 tablespoons oil or liquid, 1 1/2 teaspoons ground cumin, 1 teaspoon ground coriander, 1 teaspoon shrimp paste, 1 teaspoon palm sugar, 1/2 teaspoon whole cumin seeds, 1/2 teaspoon ground cinnamon, 1/4 teaspoon ground cardamom, 1/8 teaspoon nutmeg, 1/8 teaspoon ground cloves, and 1-3 tablespoons coconut milk in a food processor or blender.

  2. Blend until a thick, well-incorporated paste forms.

  3. Store the finished paste in a tightly sealed glass jar.
