Instructions

  1. Soak 1 cup sticky rice in 1 cup lukewarm water in a medium saucepan for 20 to 30 minutes; do not drain.

  2. Add 1/2 cup lukewarm water, 1/2 can coconut milk, 1/4 teaspoon salt, and 1 tablespoon brown sugar to the rice; stir well.

  3. Bring the mixture to a gentle boil, then partially cover and reduce heat to a simmer. Cook until the liquid is absorbed, 20 to 30 minutes.

  4. Remove from heat, cover tightly, and let sit for 5 to 10 minutes.

  5. For the sauce, warm the remaining 1/2 can coconut milk in a small saucepan over medium-low heat for 5 minutes; do not boil. Stir in 3 tablespoons brown sugar until dissolved, adjusting sweetness as desired.

  6. Slice mangoes into bite-sized pieces.

  7. Serve warm rice topped with coconut sauce and mango slices, adding more sauce as a final drizzle.
