Instructions

  1. Rinse and spin lettuce leaves, then chill until ready to serve.

  2. Roughly chop cashews and set aside.

  3. Combine fish sauce, soy sauce, hoisin sauce, brown sugar, and lime juice to create the stir-fry sauce.

  4. Heat a wok or large frying pan over high heat; add oil, then stir-fry garlic, onion, galangal or ginger, and chili for 1 minute.

  5. Add ground beef and stir-fry for 5 to 6 minutes, gradually incorporating up to half of the stir-fry sauce.

  6. Stir in green pepper and a few more tablespoons of sauce, then stir-fry for 2 to 3 minutes.

  7. Add tomatoes and the remaining stir-fry sauce; continue to stir-fry for 2 more minutes.

  8. Remove from heat, then fold in chopped fresh basil.

  9. Taste and adjust flavor with additional fish sauce for savoriness, lime juice for saltiness, or chili for spice.

  10. Serve the hot stir-fry in lettuce leaves, topped with chopped cashews.
