Thai Grilled Whole Fish With Coriander-Chili Sauce

A versatile Thai fish dish can be prepared by grilling on a barbecue or pan-frying indoors.

Instructions

  1. Pat the fish dry and make 2-3 diagonal cuts on each side.

  2. Squeeze lime juice over and inside the fish, then sprinkle with sea salt.

  3. Blend water, tamarind (or lime juice and soy sauce), garlic, sugar, galangal (or ginger), coriander, fish sauce, and chiles in a food processor.

  4. Simmer the blended sauce with diced pepper in a saucepan for 5-8 minutes over medium-low heat. Taste and adjust for saltiness with fish sauce or sweetness with sugar, then keep warm.

  5. Grill the fish on a medium-high (375 F) barbecue or deep-fry in 1 cup oil for approximately 5 minutes per side, until browned and flaky; allow at least 2 minutes before turning.

  6. Plate the fish, pour the sauce over, and garnish with fresh coriander and lime wedges.
