Thai Grilled Tom Yum Shrimp Recipe

Instructions

  1. Prepare a medium (3500F to 3750F) grill.

  2. Blend lemongrass, garlic, ginger, chili, cilantro, fish sauce, oil, soy sauce, shrimp paste, lime juice, sugar, and onion to form a smooth paste.

  3. If using wooden skewers, soak them in water for 10 minutes.

  4. Place shrimp and optional scallops in a bowl; coat with 1/2 to 3/4 of the paste. Reserve the remaining paste for sauce.

  5. Marinate the seafood for 10 to 12 minutes.

  6. Skewer the marinated shrimp and scallops.

  7. Grill skewers, turning once and basting with reserved marinade during the turn, for about 4 minutes total until shrimp are firm and pink.

  8. To make the side sauce, simmer the reserved marinade in a small saucepan for 30 seconds to 1 minute. Stir in coconut milk. Adjust taste with more sugar, coconut milk, lime juice, or chili as desired.

  9. Serve grilled shrimp garnished with cilantro and the warm dipping sauce.
