Thai Grilled Pork Salad

Instructions

  1. Preheat the grill to high heat.

  2. Season the pork neck with salt, fish sauce, sugar, and garlic, then marinate at room temperature for at least 30 minutes.

  3. Grill the pork on each side for 5 minutes until charred, then continue cooking until the internal temperature reaches 145 F; remove and let rest.

  4. Meanwhile, prepare the dressing by stirring together onion, spring onion, cilantro, fish sauce, lime juice, sugar, and chili flakes in a bowl.

  5. Slice the rested pork against the grain, add it to the dressing bowl, and toss to combine.

  6. Serve the salad with sticky rice or on a bed of lettuce.
