Thai Fried Chicken
A crispy and flavorful Thai fried chicken, made distinct by its aromatic herb and spice paste.

Instructions

Process coriander, garlic, chile, black pepper, ground coriander, ground cumin, cumin seeds, oyster sauce, fish sauce, shrimp paste, and sugar to create a spice paste.

Coat chicken pieces with the paste and marinate for at least 30 minutes, up to 24 hours.

Combine flour mixture ingredients in a large bowl.

Dredge the marinated chicken in the flour mixture, keeping the paste on the chicken.

Heat at least 1 inch of oil in a frying pan or wok over medium-high heat until hot enough to fry a bread cube golden in 20-30 seconds.

Gently place chicken in the hot oil. Fry for at least 5 minutes before turning, reducing heat as needed.

Continue frying for 10-20 minutes total until uniformly dark golden brown; remove and drain on paper towels. Serve with Thai sweet chili sauce.
