Thai Fried Chicken

Instructions

  1. Process coriander, garlic, chile, black pepper, ground coriander, ground cumin, cumin seeds, oyster sauce, fish sauce, shrimp paste, and sugar to create a spice paste.

  2. Coat chicken pieces with the paste and marinate for at least 30 minutes, up to 24 hours.

  3. Combine flour mixture ingredients in a large bowl.

  4. Dredge the marinated chicken in the flour mixture, keeping the paste on the chicken.

  5. Heat at least 1 inch of oil in a frying pan or wok over medium-high heat until hot enough to fry a bread cube golden in 20-30 seconds.

  6. Gently place chicken in the hot oil. Fry for at least 5 minutes before turning, reducing heat as needed.

  7. Continue frying for 10-20 minutes total until uniformly dark golden brown; remove and drain on paper towels. Serve with Thai sweet chili sauce.
