Thai Fried Bananas (Kluai Khaek)

Instructions

  1. Heat 3/4 to 1-inch of oil in a wok or skillet to 350-375 F.

  2. Peel and slice bananas lengthwise into four pieces.

  3. In a mixing bowl, combine all-purpose flour, 1/4 cup rice flour, cornstarch, salt, and 2 tablespoons shredded coconut.

  4. Dissolve baking soda in cold water, then add it to the flour mixture along with an egg and vanilla; stir until a smooth batter forms.

  5. In a separate bowl, mix 1/3 cup rice flour with 1 tablespoon shredded coconut for dredging.

  6. Dip each banana piece into the prepared batter, then gently dredge it in the rice flour-coconut mixture.

  7. Carefully place coated bananas in the hot oil and fry for approximately 1 minute per side until golden brown.

  8. Remove fried bananas and drain on paper towels.
