Thai Curry Chicken With Jasmine Rice

Instructions

Heat oil in a wok or large pot. Stir-fry garlic and onion until fragrant, then add chicken and stir-fry briefly.

Add stock and dry spices, bring to a boil, then reduce heat to a simmer.

Stir in tomato puree, makrut lime leaves or lime juice, fish sauce, and any desired vegetables. Simmer for 15 minutes until chicken is cooked.

Add coconut milk and reduce heat to low, stirring to combine. Taste and adjust seasoning with more coconut milk, fish sauce, or cayenne as needed.

Top with fresh coriander and serve with rice.
