Thai Curried Chicken With Peaches

Instructions

  1. Cut chicken breast into 3/4-inch cubes.

  2. Heat 1-2 tablespoons of oil in a wok or frying pan over high heat.

  3. Stir-fry onion for 2 minutes until translucent.

  4. Add chicken and garlic; cook for about 5 minutes until golden brown and almost cooked through.

  5. Stir in red curry paste, sugar, fish sauce, lime peel, and coconut milk; bring to a boil then simmer for 2 minutes.

  6. Drain peaches; add snow peas, red pepper, and peaches to the mixture and cook, stirring, for 2 minutes.

  7. Serve over cooked rice, garnished with green onions, basil, and cilantro.
