Instructions

  2. Combine rice, coconut milk, water, salt, and shredded coconut in the pot; stir.

  3. Bring the mixture to a bubbling boil over high heat.

  4. Reduce heat to low, cover tightly, and cook for 1 hour until liquid is absorbed.

  5. Turn off heat, leaving the pot covered, and let sit for 5 to 10 minutes.

  6. Fluff and serve the rice.
