Instructions
-
Cut steak into thin 2- to 3-inch strips.
-
Combine soy sauce, brown sugar, and cornstarch for the marinade; pour over beef and toss, then set aside.
-
Mix stock, oyster sauce, fish sauce, brown sugar, and chiles for the stir-fry sauce.
-
Heat a wok with oil over medium-high heat, then add shallot, garlic, and ginger; stir-fry for 1 minute.
-
Add marinated beef; stir-fry for 4 to 5 minutes until browned, adding sherry as needed.
-
Stir in broccoli, red pepper, and the stir-fry sauce. Reduce heat to medium and simmer for 5 minutes, stirring occasionally, until vegetables are tender-crisp.
-
Mix cornstarch and water. Push ingredients to the side of the wok. Stir the cornstarch mixture into the liquid to thicken the sauce, then combine all ingredients.
-
Turn off heat and drizzle with sesame oil. Adjust seasoning with fish sauce, lime or lemon juice, sugar, or chile as desired. Serve with Thai jasmine rice.
