Thai Beef and Broccoli Stir-Fry

Instructions

  1. Cut steak into thin 2- to 3-inch strips.

  2. Combine soy sauce, brown sugar, and cornstarch for the marinade; pour over beef and toss, then set aside.

  3. Mix stock, oyster sauce, fish sauce, brown sugar, and chiles for the stir-fry sauce.

  4. Heat a wok with oil over medium-high heat, then add shallot, garlic, and ginger; stir-fry for 1 minute.

  5. Add marinated beef; stir-fry for 4 to 5 minutes until browned, adding sherry as needed.

  6. Stir in broccoli, red pepper, and the stir-fry sauce. Reduce heat to medium and simmer for 5 minutes, stirring occasionally, until vegetables are tender-crisp.

  7. Mix cornstarch and water. Push ingredients to the side of the wok. Stir the cornstarch mixture into the liquid to thicken the sauce, then combine all ingredients.

  8. Turn off heat and drizzle with sesame oil. Adjust seasoning with fish sauce, lime or lemon juice, sugar, or chile as desired. Serve with Thai jasmine rice.
