Instructions

  1. Combine all stir-fry sauce ingredients and set aside.

  2. Prepare a paste from the garlic, chile, and onion, then set aside.

  3. Heat a wok or large frying pan over medium-high heat.

  4. Drizzle in oil, then stir-fry the shrimp for 1 minute until light pink.

  5. Add the garlic-chili paste and continue stir-frying for 1 more minute.

  6. Incorporate the peppers and chicken stock, stir-frying for 3 minutes until peppers are tender-crisp.

  7. Pour in the reserved stir-fry sauce while continuing to stir-fry.

  8. Remove from heat, then stir in the cashews and fold in the basil.
