Thai Basil Pork

Instructions

  1. Combine all stir-fry sauce ingredients in a cup, stirring until sugar dissolves, then set aside.

  2. Heat a wok or large pan over medium-high heat with 2-3 tablespoons of oil. Stir-fry garlic and chile for 30 seconds to 1 minute until fragrant.

  3. Add pork, chicken, or beef and cook, stirring, for 5-6 minutes until nearly done. Incorporate half of the chicken stock while stirring.

  4. Push ingredients to one side of the pan, crack an egg into the center, scramble it quickly, then mix with the other ingredients.

  5. Add the stir-fry sauce and stir to combine. Reduce heat to medium-low and simmer for 2-3 minutes, adding more stock if the preparation needs moisture.

  6. Stir in the remaining chicken stock, basil, and green onions. Reduce heat to low and taste; adjust saltiness with lime juice, fish sauce, or Golden Mountain sauce, and add more chile if desired.

  7. Serve immediately with rice.
