Instructions
-
Preheat the oven to 350 F.
-
Combine shallot, garlic, galangal, coriander, basil, fish sauce, coconut milk, makrut lime leaves, sliced red chile, chili powder, and lime juice in a food processor; process until smooth.
-
Marinate fish fillets for 10-15 minutes by coating them in half of the processed coconut mixture, reserving the rest.
-
Wrap each marinated fillet in a 1-foot square of banana leaf, parchment paper, or foil, folding the sides and ends to create a sealed packet.
-
Place packets in a casserole dish and bake for 15 minutes, or longer for thicker fillets.
-
Check for doneness after 15 minutes; the fish is cooked when opaque throughout. If not, return to the oven for 5-10 more minutes.
-
Gently warm the reserved coconut sauce over low heat.
-
Serve the baked fish with white rice, spooning additional warmed coconut sauce over it and garnishing with basil or coriander leaves.
