Thai Baked Fish in Banana Leaf Recipe

Instructions

  1. Preheat the oven to 350 F.

  2. Combine shallot, garlic, galangal, coriander, basil, fish sauce, coconut milk, makrut lime leaves, sliced red chile, chili powder, and lime juice in a food processor; process until smooth.

  3. Marinate fish fillets for 10-15 minutes by coating them in half of the processed coconut mixture, reserving the rest.

  4. Wrap each marinated fillet in a 1-foot square of banana leaf, parchment paper, or foil, folding the sides and ends to create a sealed packet.

  5. Place packets in a casserole dish and bake for 15 minutes, or longer for thicker fillets.

  6. Check for doneness after 15 minutes; the fish is cooked when opaque throughout. If not, return to the oven for 5-10 more minutes.

  7. Gently warm the reserved coconut sauce over low heat.

  8. Serve the baked fish with white rice, spooning additional warmed coconut sauce over it and garnishing with basil or coriander leaves.
