Tfaya: Moroccan Caramelized Onions With Raisins

Instructions

  1. Soak raisins in water for at least 15 minutes, then drain.

  2. Thinly slice onions and combine them with the drained raisins, butter, honey, pepper, cinnamon, ginger, turmeric, saffron, salt, and water in a pot.

  3. Cover and bring the mixture to a boil, then reduce heat and simmer for 30 minutes or until onions are very soft and golden, adding water if necessary.

  4. Uncover and reduce the liquids to a thick syrup, then stir in orange flower water to taste.
