Texas-Style Ground Beef and Rice Casserole

Instructions

  1. Preheat the oven to 350 F and grease a 2-quart casserole dish.

  2. Brown ground beef and sliced onions in a large skillet over medium-high heat until beef is no longer pink; drain fat.

  3. Stir in garlic and bell pepper, cooking for 2 minutes.

  4. Add tomatoes, tomato paste, cooked rice, chili powder, salt, and pepper to the skillet; mix thoroughly.

  5. Transfer the mixture to the prepared dish and bake for 20 minutes.

  6. Optionally, sprinkle with shredded cheese and bake for 5 to 10 more minutes.

  7. Remove from oven and serve.
