Texas Sheet Cake and Icing

Instructions

  1. Preheat oven to 350 F.

  2. In a saucepan, melt butter with water and cocoa over medium heat, stirring until combined; let cool slightly.

  3. Add sugar, flour, salt, eggs, baking soda, sour cream, and 1 teaspoon vanilla to the cooled mixture; mix thoroughly.

  4. Pour batter into a 15x10x1-inch sheet cake pan and bake for 20 minutes, or until a toothpick inserted into the center comes out clean.

  5. While the cake bakes (about 10 minutes before it is done), combine butter, cocoa, and milk in a saucepan; bring to a boil, then remove from heat.

  6. Stir in confectioners' sugar and 1/2 teaspoon vanilla, then blend with an electric mixer until smooth; stir in pecans.

  7. Immediately pour and spread the hot icing evenly over the hot cake.

  8. Cool the cake before slicing into squares to serve.
