Tex-Mex Meatloaf With Black Beans
A hearty black bean meatloaf features Tex-Mex flavors and Mexican cheeses.

Instructions

Preheat the oven to 350 F.

Lightly grease a baking dish.

In a large bowl, combine ground beef, beans, onion, optional cilantro or parsley, chili powder, cumin, garlic powder, salt, pepper, egg, breadcrumbs, and milk; mix gently until just combined.

Pat the meat mixture onto an 18-inch length of foil to form a 10x12-inch rectangle. Spread cheese over the rectangle, leaving 1/2 inch clear at the edges, then roll up and pinch seams closed.

Transfer the meatloaf to the greased baking dish and bake for 1 hour and 15 minutes.

Optionally, spoon salsa over the loaf 5 minutes before baking is complete.

Check for doneness; the internal temperature should reach 160 F.

Remove from oven, transfer to a serving plate, and let rest for 10 minutes before slicing.

Slice and serve with salsa, rice, potatoes, or corn; refrigerate any leftovers.
