Tex-Mex Macaroni and Ground Beef Casserole

Instructions

  1. Preheat the oven to 350F and start boiling salted water for pasta.

  2. Cook macaroni or mini ziti according to package directions, then drain, rinse with hot water, and set aside.

  3. Grease a 2 1/2- to 3-quart baking dish.

  4. Brown ground beef with onion in a large skillet until softened, then add bell pepper and cook until beef is no longer pink.

  5. Stir in garlic and taco seasoning, cooking for 1 minute.

  6. Add nacho cheese soup, tomato paste, diced tomatoes, and half of the cheese; cook until blended and bubbly.

  7. Combine the cooked macaroni with the beef mixture, then spoon into the greased baking dish.

  8. Top with remaining cheese and bake for 10 to 15 minutes until bubbly and the cheese is melted.
