Tex-Mex Macaroni and Black Bean Salad

Instructions

  1. Start boiling salted water for macaroni.

  2. Cook macaroni per package directions, then drain and rinse with cold water.

  3. In a large bowl, combine the cooled macaroni with tomatoes, bell pepper, onion, cucumber, beans, corn, cilantro, and garlic.

  4. Separately, stir together all dressing ingredients in a bowl.

  5. Pour the dressing over the macaroni mixture and stir to blend thoroughly.

  6. Chill and serve.
