Tentsuyu: Tempura Dipping Sauce

Tentsuyu is a quick and flavorful tempura dipping sauce, easily prepared when dashi stock is available.

Instructions

  1. Start simmering cold water with kombu in a saucepan for 5-7 minutes until tender.

  2. Remove the kombu, then add bonito flakes and steep for 10-15 minutes.

  3. Strain the dashi broth, pressing the bonito to extract liquid, then discard the bonito.

  4. Combine the prepared dashi, mirin, soy sauce, and sugar in a saucepan and mix thoroughly.

  5. Bring the mixture to a boil, then turn off the heat and allow it to cool.

  6. Serve the cooled tentsuyu with tempura, optionally garnished with grated daikon.
