Tender Slow-Grilled Beef Ribs

Instructions

  1. Whisk together 1/2 cup dry red wine, 1/4 cup soy sauce, 2 tablespoons vegetable oil, 2 tablespoons barbecue sauce (optional), 1 teaspoon dried thyme, 1/2 teaspoon salt, 1/2 teaspoon black pepper, and 2-3 minced garlic cloves.

  2. Coat 4 pounds beef back ribs evenly with the marinade in a non-metal dish.

  3. Cover the dish and refrigerate for 2 to 6 hours; allow ribs to reach room temperature before grilling.

  4. Prepare a grill for indirect heat, setting the active burner to 250 F.

  5. Once hot, place ribs on the cool side of the grill, discarding the marinade.

  6. Close the lid and cook for approximately 3 hours, or until tender, turning every 15 minutes.

  7. For added flavor, brush with barbecue sauce during the last 15 minutes, watching carefully to avoid scorching.

  8. Serve once ribs reach an internal temperature of 165 F.
