Instructions
-
Whisk together 1/2 cup dry red wine, 1/4 cup soy sauce, 2 tablespoons vegetable oil, 2 tablespoons barbecue sauce (optional), 1 teaspoon dried thyme, 1/2 teaspoon salt, 1/2 teaspoon black pepper, and 2-3 minced garlic cloves.
-
Coat 4 pounds beef back ribs evenly with the marinade in a non-metal dish.
-
Cover the dish and refrigerate for 2 to 6 hours; allow ribs to reach room temperature before grilling.
-
Prepare a grill for indirect heat, setting the active burner to 250 F.
-
Once hot, place ribs on the cool side of the grill, discarding the marinade.
-
Close the lid and cook for approximately 3 hours, or until tender, turning every 15 minutes.
-
For added flavor, brush with barbecue sauce during the last 15 minutes, watching carefully to avoid scorching.
-
Serve once ribs reach an internal temperature of 165 F.
