Tempura Udon

Instructions

  1. Start boiling water for the udon noodles and separately for the broth.

  2. Reheat pre-made tempura in a dry nonstick pan over medium-high heat, turning until crisp; set aside.

  3. Cook frozen udon noodles in boiling water for 1 to 2 minutes until tender, then rinse with cold water.

  4. Divide the cooked udon among 4 bowls.

  5. In a separate large pot, combine 8 cups of water with dried bonito powder, mirin, and soy sauce, bringing the mixture to a rolling boil over medium-high heat.

  6. Taste the broth and adjust flavor with sugar or additional soy sauce as desired.

  7. Ladle the hot broth over the noodles, top with crispy tempura, and garnish with fish cake, green onions, and shichimi togarashi if using, then serve immediately.
