Instructions

  1. Heat oil to 375 F in a heavy-bottomed pan.

  2. Thaw frozen hash browns, squeeze out excess water, and chop them into pieces no larger than 1/2 inch.

  3. In a large bowl, combine Parmesan cheese, flour, oregano, parsley, salt, and pepper.

  4. Add the grated onion, garlic, and prepared potatoes to the bowl, then mix thoroughly until spices are evenly distributed.

  5. Form the mixture into 1-inch long cylinders, flattening the ends to create the distinct tot shape.

  6. Fry 6-7 tots at a time, flipping after about 2 minutes per side until golden brown.

  7. Remove fried tots and drain on a paper towel-lined baking sheet, repeating until all are cooked.

  8. Serve immediately, garnished with chopped parsley and a side of ketchup.
