Instructions

  1. Preheat oven to 350 F.

  2. In a small saucepan, combine tomato paste, red wine, water, garlic, basil, oregano, and salt; bring to a boil, then reduce heat and simmer uncovered for 15 minutes. Set aside.

  3. In a large bowl, mix turkey, oatmeal, egg substitute, zucchini, and 1/2 cup of the prepared tomato mixture.

  4. Press this mixture into an ungreased 8x4-inch loaf pan and shape into a loaf.

  5. Bake for 45 minutes; discard drippings.

  6. Pour 1/2 cup of the remaining tomato mixture over the loaf and bake for an additional 15 minutes.

  7. Transfer to a serving platter and cool for 10 minutes before slicing.

  8. Serve with the remaining tomato sauce on the side.
