Tarragon Chicken Salad

Instructions

  1. Preheat the oven to 350 F.

  2. Rub chicken breasts with olive oil, season with salt and pepper, and roast for 35-40 minutes until cooked through; cool.

  3. Dice or shred the cooled chicken.

  4. Whisk mayonnaise, Greek yogurt, lemon juice, Dijon mustard, and tarragon for the dressing.

  5. Stir the dressing into the diced chicken, celery, and onion; adjust seasoning as needed.
