Instructions

  1. Combine flour and salt in a bowl or food processor, then add eggs and mix until a shaggy dough forms that can clump into a ball; add more egg if necessary.

  2. Form the dough into fist-sized balls and rest, covered, for 15 minutes.

  3. Grate the dough through a large-holed grater, spread crumbles on a clean surface, and let dry for several hours before use, or two days for storage in an airtight container for up to four weeks.
