Taquitos, Rolled and Baked Chicken or Beef Tacos

Instructions

  1. Preheat the oven to 450 F.

  2. If using chicken, boil chicken breasts in a covered saucepan for 15 to 20 minutes until cooked through.

  3. Drain the chicken, shred it, and place it in a large bowl.

  4. Sauté chopped onions in 1 tablespoon of olive oil until translucent.

  5. Add 1/2 cup water, cumin, chile powder, and garlic to the chicken mixture; simmer on low heat until liquid is absorbed, then cool for 15 minutes.

  6. Stir chile sauce and shredded cheese into the cooled chicken mixture until well combined.

  7. Lightly brush each tortilla with oil and warm on a griddle until pliable.

  8. Place 3 to 4 tablespoons of filling lengthwise on each tortilla, then roll and place seam-side down in a baking dish.

  9. Bake the tacos in a single layer for approximately 15 minutes until crispy.

  10. Serve immediately with desired condiments.
