Tamale Pie With Cheese Cornmeal Topping

Instructions

Preheat oven to 375 F and grease a 2 1/2-quart or 9x13-inch baking dish.

In a large skillet, heat olive oil over medium heat, cook ground beef until browned, then drain excess fat.

Stir in chopped onion, garlic, and bell pepper, cooking for 2 minutes until tender.

Add tomatoes, corn, and seasonings, simmering the mixture for 5 minutes.

Combine 1/2 cup cornmeal with 1 cup water, then stir into the beef mixture, cover, and cook on low for 10 minutes.

Stir sliced olives into the beef mixture, then pour it into the prepared baking dish.

For the topping, heat 1 1/2 cups milk with 1 teaspoon salt and butter in a medium saucepan until hot, then gradually stir in 1/2 cup yellow cornmeal until thickened.

Remove from heat, stir, then incorporate cheese and beaten eggs.

Pour the cornmeal topping over the beef mixture, spreading it evenly to the edges.
