Tahini Halvah

Instructions

  1. Lightly oil a 6-cup mold or pan.

  2. Heat honey in a heavy saucepan over medium heat to 240 F (soft-ball stage).

  3. Cool honey slightly, then add vanilla and nuts.

  4. Fold in tahini and stir until well blended.

  5. Pour the mixture into the prepared pan and cool completely.

  6. Wrap and refrigerate for 24 to 36 hours for texture development.

  7. Slice cold halvah and serve at room temperature; it keeps for months refrigerated.
