Instructions

  1. Rub the pork butt with salt and pepper.

  2. Brown the seasoned pork butt on all sides in an Instant Pot on sauté mode or in a large pan on the stove.

  3. Blend chicken stock, chipotles, pineapple, red onion, chili powder, cumin, lime juice, white vinegar, and garlic until smooth.

  4. Cut the pork into quarters if necessary, then place it in the slow cooker or Instant Pot and cover with the blended marinade. Cook in a slow cooker on low for 8 hours or high for 4 hours, or in an Instant Pot on the Meat setting for 45 minutes.

  5. Remove pork from the pot, shred it, then return it to the marinade. Cook in the Instant Pot or a pot on the stove over medium-high heat for 5 minutes until the sauce thickens.

  6. Serve the pork with warm corn tortillas, diced pineapple, cilantro, cotija cheese, and red onion.
